Queso is life. Okay-- I'm exaggerating. It's not life. But it can make life a lot better, especially if you're having a difficult day. The thing is, you can turn any cheese into melty, dippy, gooey yumminess.
Now, it doesn't sound appetizing... but the magic to meltiness is Sodium Citrate.
I know. Sounds gross. But it's science. The ratio is for every cup of grated cheese you'll need a quarter cup of water and a half-teaspoon of sodium citrate. Heat the water to a simmer, add the sodium citrate to dissolve, then whisk in the cheese of your choice a little bit at a time until you get a smooth and creamy mix.
