The whole white Christmas thing made me feel all kinds of cozy bliss. Though I loathe driving in snow, I do enjoy the peaceful calm associated with a snow-covered landscape. And I also think about delish casseroles to make me warm and cozy in my belly. LOL
Here's a dish I tried the other day that ticked all the boxes: easy to make; delicious; husband-approved.
Swiss Cheese Chicken Stuffing Casserole
1 1/2 pounds chicken tenders
2 (8 oz) boxes Stove Top stuffing (I used one chicken, one sage)
1/2 cup butter for stuffing
3 cups water for stuffing
2 (10.5 oz) cans cream of chicken soup (I actually used one can with half a can of almond milk to make a sauce)
8 slices Swiss cheese
Prepare stuffing mix according to package directions. Preheat oven to 350. Spray a 13x9x2 inch casserole dish with cooking spray and set aside. Spread chicken on bottom of casserole dish. Spread cream of chicken soup over the raw chicken and evenly spread the Swiss over the chicken and soup mixture. Spoon stuffing over the mixture and spread over the top. Cover with foil. Bake for 45 minutes. Remove foil and bake an additional 15 minutes or until casserole is bubbly and chicken is cooked through.
