Mangia! Mangia!

The slow cooker is my favorite kitchen gadget (the air fryer is a close second). It's so easy to make things in the slow cooker, and really hard to mess things up (unless you leave something cooking all day and night because you forgot about it like a co-worker did, but that's another story for another time.)

I promised y'all I'd share my recipe for slow cooker lasagna. I love lasagna. But I loathe how labor-intensive it is. But this recipe is so simple, you'll make lasagna more often. And yes, you can still get "corner piece" action. But in this case, it's more like "ends". LOL

Slow Cooker Lasagna

1 lb. ground beef

Lasagna noodles

1 jar spaghetti sauce

1 1/2 cups cottage cheese

1 1/2 cups shredded Mozzarella cheese

2 TBSP. grated Parmesan cheese

Brown ground beef and drain. Spoon 1 cup spaghetti sauce in bottom of a 4 quart slow cooker. Mix remaining sauce with beef. Place 2 uncooked noodles on the sauce in slow cooker. Spread 1/3 meat mixture on top of noodles. Spread 3/4 cup cottage cheese over the meat. Sprinkle 1/2 cup Mozzarella cheese over cottage cheese. Add another layer of noodes, 1/3 meat mixture, the remaining cottage cheese and 1/2 cup Mozzarella cheese. Sprinkle Parmesan over top. Cook on LOW for 4 hours.
